Colin Campbell Center for Nutrition Studies and eCornell and I’m a graduate of the Food Revolution Network’s Plant-based Coaching Certification program. I graduated from the Rouxbe (Forks Over Knives) Plant-based cooking course and I’m currently enrolled in the McDougall Starch Based certification program. I completed Claire Zammit’s Institute for Women-Centered Coaching, Foundations of Women-Centered Coaching Program and Dr. Will Bulsiewicz’s Plant Fed Gut program. My journey started back in 2017 when my family of five watched the documentaries, What the Health, Forks Over Knives, and Plant Pure Nation. What followed was a complete transition to a plant-based life for all of us. We took this one step at a time, cutting out animal products and then working to eliminate processed junk foods while at the same time increasing our daily consumption of a variety of plants. We were encouraged along the way by the myriad of health benefits we quickly noticed. Feeling so good and watching my family experience these benefits motivated me to dive into learning all I could about the science and research behind plant-based nutrition. From this deep dive and from years of trial and error, I figured out how to make this work for my entire family in our real, day-to-day lives, without giving up social events, going out to eat, traveling, and hosting family and friends.
