Uyen Chu, MD, FACS, has made an extraordinary transition from celebrated surgeon to longevity medicine pioneer. Dr. Jeff Pierce is passionate about using a whole food, plant-based diet and other lifestyle medicine modalities to help people get healthier, get off of medications, and live longer, fuller lives. His goal is to meet his patients where they are, and work with them at their pace to improve their health, one day at a time. He is board certified in both Family Medicine and Lifestyle Medicine and is licensed to see patients in California, Florida, and Texas. I have been a physician for over 47 years in Oregon. I am retired but volunteer my time at free clinics, teach free community classes, and council for free those wishing to transition to a more whole food plant based lifestyle. I have spent 8 years in Family Practice, almost 27 years in Emergency Medicine, and the last 12 years in Lifestyle Medicine. I am a family medicine and lifestyle medicine specialist who moved to Guam after losing my home and medical practice in the 2018 Camp Fire disaster in Paradise, California. After two years serving the people of Micronesia, I accepted a position as medical director of the Rocky Mountain Lifestyle Center in Denver, Colorado. I have now transitioned into a new position with AdventHealth as a primary care physician at Advent Health Family Medicine – Castle Pines in Castle Pines, Colorado. I am board-certified in family medicine and lifestyle medicine. I’m a founding member of the American College of Lifestyle Medicine. I enjoy helping individuals regain health through plant-based nutrition, exercise, and other lifestyle changes.

I obtained my medical degree at Loma Linda School of Medicine in Loma Linda, California. Following graduation from Loma Linda University, I completed residency training in family medicine at Hinsdale Hospital near Chicago. During residency, I gave health lectures in Poland, Russia, and Serbia.

​I became interested in lifestyle medicine while in residency. I enjoyed seeing patients experience dramatic health improvements at Lifestyle Center of America during six years of medical practice at this residential Intensive Therapeutic Lifestyle Change (ITLC) program in Sulphur, Oklahoma. Before joining AdventHealth, I served as medical director at Rocky Mountain Lifestyle Center in Denver, Colorado.

​To share with a wider audience principles leading to exciting health improvements, I co-hosted Total Health, a weekly radio talk show aired over 91.9 FM, JoyFM Radio Guam, and continued this passion in Denver on KPLS AM 1500. Also, I have authored the book, “Dr Arnott’s 24 Realistic Ways to Improve Your Health”, now also available in Spanish.

​I met my wife, Sylvia, while in residency training at Hinsdale Hospital. We have three children. We enjoy spending time together in nature, formerly in the coral reefs of Guam, and now in the Rocky Mountains of Colorado. I also enjoy scuba diving, backpacking, off-roading, bird watching, Pickleball, and medical mission trips with my family.

LIFESTYLE MEDICINE CONSULTATION – A great way to get started. I work with you individually to help you get a great start on making positive lifestyle changes in every area of your life. You will fill out a comprehensive assessment about your history, lifestyle habits, stress and goals. We’ll schedule a 1-on-1 Zoom session for approximately 2 hours to review your information, so I can provide information, and we’ll develop a strategic plan of action.
INDIVIDUAL LIFESTYLE MEDICINE COACHING – Sessions are usually once a week for an hour, customized to your needs.

My passion is helping people, animals, and our mother earth. My bliss is seeing clients getting healthier, more functional, and happier with a whole plant food diet and healthy lifestyle, less animals killed for food, and healing of our environment. When I work with a client, I enter into a sacred trust with that client which includes showing up, confidentiality, non-judgement, holding space, and active compassionate listening. I have decades of experience doing this educating people about food as medicine approach to healing the significant illnesses and conditions plaguing our world, 40 years experience doing this with my massage clients, 15 years with my domestic violence survivor clients, and 30 years with the dancers I lead when teaching Ahimsa Sacred Circle Dance.

As a certified Plant-Based Health Coach, I also walk my talk as having lived a vegan lifestyle since 1971. I am also a committed student dedicated to lifelong learning in holistic health.
