Beth has experienced her own transformation through plant-based eating. In December, 2017, she had to leave her job of 30 years as a music educator due to her own battles with pain and weight issues. She encountered challenges in carrying out basic activities such as going up stairs or participating in meetings. She could no longer even imagine setting up the stage for my middle school orchestra!
Her journey from pain to relief began in 2018 after watching the movie, “Forks Over Knives”. Having recently completing the research for her EdD dissertation, she gained a greater understanding and admiration for the research and outcomes showcased in this film. It was truly impressive to see the profound influence of dietary changes on people’s lives, which was both evident and inspiring!
Since then, she has gained valuable knowledge and skills. She recently achieved Root-Cause Health Coach certification from Lifestyle Prescriptions University, following previous certifications in Plant-based Coaching from the Food Revolution Network, and Whole Foods Plant-based Nutrition from Cornell University. Through this journey, she has shed 50 pounds and maintained the weight loss, was able to discontinue BP medication after 22 years, and at the age of 68, even jogged the whole way to the end of her first-ever 5K race! She is now enthusiastic about assisting others in their health endeavors, supporting them through each step of the way!

I am a dermatologist raised on a Western diet, who converted to plant-based eating nearly 5 years ago after being forced to read The China Study for my wife’s birthday present. She knew that I would be convinced as an epidemiologist if I read the data, and she was right. I am an academic dermatologist at the University of Utah. I am currently on a two-year sabbatical working as a senior medical officer in dermatology at Christchurch Hospital in New Zealand to experience a quality national healthcare system firsthand.
As a dermatologist, my research and clinical focus has been to understand what matters most to his patients and how his patients’ skin issues affect their quality of life. This links well with my goal to help patients transition to a plant-based lifestyle. I am also keenly aware of how complicated health insurance is, and often, how patients are required to pay for more of their care and treatments out-of-pocket. I spend time trying to identify the most cost-effective care for my patients and have made this knowledge available online at medicalsecrets.com.
My specialty is helping people identify their health and lifestyle goals and taking the small steps that lead to transformative change and living their dream. I help people claim ownership of their daily habits so they feel better physically and emotionally. This includes action planning, kitchen organization, and navigating grocery stores, restaurants and other social situations. I understand the value of finding one’s inner strengths, nurturing them and leaning on them to grow in the direction you want. My plant-based journey kicked into high gear about 20 years ago when I participated in an intensive plant-based program. I was raising children, commuting a long way to work, and eating the standard American diet, resulting in being fatigued, overweight and not happy with my health status. Today I am 50 pounds lighter, have improved my biometrics, and have more energy than I did years ago. I am skilled at helping people find their inner strengths and motivations, and nurturing them to achieve more than was imagined.

Do you worry about chronic inflammation, heart disease or cancer. Maybe you can relate to how I felt before I regained control over my heath. I was sick and tired of feeling lousy and not having enough energy to get through my day. I was shocked when my doctor told me I was pre-diabetic, had high cholesterol, fatty liver disease and on the cusp of being diagnosed as obese. Does any of this sound familiar and keep you up at night or keep you from doing the things you love, like playing with your kids or grandkids, or walking your dog? Do any of these health issues keep you from participating in events with family and friends? Would you love to drop excess weight more easily and keep it off, get off prescription medications for high cholesterol or blood pressure, wake up feeling refreshed and full of energy, no longer have to wear a glucose monitor, take insulin shots and avoid eating carbohydrates? What results would you love to have so you can do what you want, when you want?
I’ve had amazing results while on my wellness journey by leaning into plant-based eating to resolve multiple, chronic lifestyle diseases without medications, excessive exercise, dieting or feeling deprived. Along the way, I earned my Plant-Based Nutrition certification from the T. Colin Campbell Center for Nutrition Studies and eCornell and I’m a graduate of the Food Revolution Network’s Plant-based Coaching Certification program. I graduated from the Rouxbe (Forks Over Knives) Plant-based cooking course and I’m currently enrolled in the McDougall Starch Based certification program. I completed Claire Zammit’s Institute for Women-Centered Coaching, Foundations of Women-Centered Coaching Program and Dr. Will Bulsiewicz’s Plant Fed Gut program. I’m currently enrolled in the Married to Health, Good Gut SIBO/IBS program with Dalia Marin, RDN, LD, CGN and James Marin, RD, EN.
With my experience, education in plant-based nutrition and coaching training, I can help you reach your health and wellness goals faster and easier than trying to do it alone. By embracing food as medicine, you can kick start and sustain the health and wellness results you would love and deserve! Let’s do this!
I have been an impassioned plant-based nutrition specialist for many years and I provide real life expertise, support, and guidance to empower people to achieve their health and situational goals and create, what I call, a Plant-Based Thrivestyle™.
My journey started back in 2017 when my family of five watched the documentaries, What the Health, Forks Over Knives, and Plant Pure Nation. What followed was a complete transition to a plant-based life for all of us. We took this one step at a time, cutting out animal products and then working to eliminate processed junk foods while at the same time increasing our daily consumption of a variety of plants. We were encouraged along the way by the myriad of health benefits we quickly noticed. Feeling so good and watching my family experience these benefits motivated me to dive into learning all I could about the science and research behind plant-based nutrition. From this deep dive and from years of trial and error, I figured out how to make this work for my entire family in our real, day-to-day lives, without giving up social events, going out to eat, traveling, and hosting family and friends.
Whether you’re plant-curious, fully plant-based, or somewhere in-between, I have been there and would love to help you learn how to easily, sustainably, and joyfully thrive while eating more plants!

Do you know people who want to eat more whole, plant-based foods but don’t know how to do it successfully? Or who are struggling with digestive issues they can’t resolve?
Well, through my coaching programs, my busy clients learn to cook delicious, life-giving meals while spending less money on food and less time in the kitchen. I’m helping them resolve a variety of issues causing gas, bloating, constipation, diarrhea, you name it. As a result, they have more energy, think more clearly, and sleep more soundly.
In fact, my client Jenny learned to cook a variety of whole food, plant-based recipes, and loves it! She’s lost 25 lbs, lowered her cholesterol 35 points, and her doctor is no longer bugging her about taking statin drugs. She went from experiencing daily gas and bloating to having none at all. She has more energy, less brain fog, and sleeps soundly.
As a coach, I love helping my clients feel better using plants as medicine. My clients meet their weight goals, discover food sensitivities, balance blood sugar, resolve emotional eating, and soothe cravings. As a result, they feel balanced, sleep well, enjoy exercising, and eat to live. They recognize when their body is out of balance and know how to get it back in balance. It takes courage to get started, but it’s a journey well worth beginning!
