I’ve been a nurse for more than 15 years. I have practiced in primary care, public health, and prevention. I am also a board-certified nurse coach. I transitioned to a plant-based diet in March 2022 after experiencing my own diagnosis. I then began to learn the many health benefits of eating plant-based and have vowed to never go back!
Nurse coaching is a partnership. Together we will explore what parts of your health and your life you would like to improve and discover roadblocks you may have. We will develop a plan that focuses on all areas of wellness, because it’s all connected and you are a whole person. Samantha Salmon is the founder of RawFoodMealPlanner.com, a health coaching and training service that specializes in brain health, weight loss, type 2 diabetes, menstrual health, raw foods, and energy. As a Certified Integrative Nutrition Health Coach and Brain Health Licensed Trainer, Samantha educates her clients on natural healing modalities such as nutrition and lifestyle to support their overall health and well-being. With a background in raw foods and plant-based nutrition, and a personal connection to diabetes through her grandmother’s death, Samantha is passionate about helping her clients achieve optimal health through dietary and lifestyle changes. She is also the former owner of Earth’s Healing Café in Chicago, Illinois, who has fed celebrities like Zoe Kravitz, former Chicago Mayor Rahm Emanuel, and fitness star Koya Webb. She is the creator of the Raw Food Health Empowerment Podcast and author of the book, “You Can Afford to Be Healthy”.
After getting a degree in economics from New York University and opening a raw vegan organic restaurant in Chicago, she went on to receive her health coach certification from the Institute for Integrative Nutrition, where she learned about more than one hundred dietary theories and studied a variety of practical lifestyle coaching methods.
Samantha is active in the health equity space in an effort to achieve her mission of eradicating type 2 diabetes in this country. She is a member of the Good Food Economy and Good Food Purchasing Policy Working Groups for LA Food Policy Council, one of the largest food policy councils in the country.
In 2013, I was diagnosed with a rare autoimmune condition called relapsing polychondritis. On the basis of extensive research, I rejected my doctor’s orders and eschewed the perils of corticosteroid treatment, instead choosing a path of changing my diet and lifestyle.
I switched to a low-fat, whole-food, plant-based diet that not only reversed my autoimmune condition, but also improved my health in countless other ways. Based on the statistics, I was supposed to be either bedridden or dead by now, but instead I am alive and well — and medication-free!
These positive changes inspired me to study nutrition-based health further, to the point where it has become an obsession of mine.

Sandra has been a physician for over 25 years, now specializing in Food as Medicine, dedicated to preserving health and reversing lifestyle-related chronic disease through whole, plant-based nutrition. Sandy co-founded and runs the nonprofit Plant Docs as an avenue for adults to learn about the power of plant-based nutrition to improve health. Sandy studied Nutritional Sciences in college then earned her MD degree from the University of Massachusetts Medical School. Sandy worked in a primary care practice, taught residents at the medical school at Brown University, and started an Obesity Clinic. Though she has witnessed the healing power of conventional medicine, she has also seen its limitations, especially with regard to disease prevention through healthy nutrition. She obtained the following additional training: a Culinary Coaching certificate from Harvard’s CHEF Coaching program, a certificate in Plant Based Nutrition from eCornell, and a Health Coaching certificate from the Institute for Integrative Nutrition. Sandy is board certified in Pediatrics, Obesity Medicine, and is in the process of becoming board certified in Lifestyle Medicine.
Through Plant Docs, Dr. Musial created and runs several programs. Our signature program is a 4-week plant-based immersion called Jumpstart Your Health! This course provides the education and tools to successfully transition to a plant-based lifestyle. We order labs before and after so you can see the powerful impact that changing your diet can have in just one month. We have seen participants lower their LDL cholesterol and blood pressure, reverse diabetes and fatty liver, decrease inflammation, and lose weight.
We also offer a fully remote Foods to Fight Cancer cooking and education course that includes information on the most studied anti-cancer foods and how to cook a meal using these ingredients. We have monthly remote Plant-Based Global Cuisine cooking classes so you can stay planted in the Plant Docs Community while learning new cooking techniques and flavor combinations. I am a Certified Life Coach, Nutrition Studies Graduate and I’m Forks Over Knives trained in plant-based culinary school. I work closely with my clients’ doctors and require blood work and doctor’s visits during their transition to assure safety and the correct use of medications. I have been studying and practicing natural healing for over 40 years and bring my love of healing to everything I do. I have a strong belief in the power of our bodies to heal if we give them a chance. She started her career as a high school teacher and professional dancer which set her up for success in transitioning to corporate training and exercise science. Jill is a Clinical Exercise Physiologist through the American College of Sports Medicine. She worked in cardiopulmonary rehab for over 8 years educating patients on the power of lifestyle changes to manage and reverse their disease. In her role, she was instrumental in bringing the The Ornish Reversal Program (ICR) to Sarasota Memorial Hospital.
Jill dedicated 10 years to the T. Colin Campbell Center for Nutrition Studies, beginning as a Plant-Based Nutrition Instructor and culminating her tenure as the Executive Director of Education. Among her most significant achievements was her role in the design and development of the organization’s flagship online program—the six-week Plant-Based Nutrition Certificate.
In 2024, Jill earned her Plant-Based Coaching Certificate from the Food Revolution Network. She also played a key role in creating the Foundations in Plant-Based Nutrition Certificate for The Plantrician Project, further contributing to advancing plant-based nutrition education.
Jill is the Director of Education for The Plantrician Project and is a passionate advocate for lifestyle medicine to transform and regenerate human health and health care. She graduated Magna Cum Laude from Tennessee State University in Nashville, TN in 2003 where she earned a B.S. in Biology with a minor in Chemistry. Dr. Toombs-Withers earned a Doctorate Degree in Osteopathic Medicine from the Edward Via Virginia College of Osteopathic Medicine located on the campus of Virginia Tech in Blacksburg, VA in 2007. After completing her formal medical education, Dr. Toombs-Withers continued her medical training at the University of Cincinnati, The Christ Hospital. She is double board certified in Family Medicine and Obesity Medicine. Over the years, Dr. Toombs-Withers has served as Adjunct Associate Professor of Family and Community Medicine with the University of Cincinnati Family Medicine Residency Program and she worked as a Family Physician for a federally qualified health center caring for underserved populations in the Cincinnati area. In 2013 Dr. Toombs-Withers was named as the Medical Director for the All Care Health Center in Council Bluffs, IA where she continued to practice family medicine and supervised a staff of physicians and nurse practitioners. Dr. Toombs-Withers moved to Chattanooga, TN in 2015 and became a Family Medicine Physician in the UT/Erlanger Primary Care Medical Group at the Pineville Road office.
