I am a Food Revolution Certified Health Coach with a degree from Harvard University. My mission is to help people thrive by giving their bodies what they need to heal and flourish. After serving as a U.S. Navy officer and later leading a company with more than 200 employees, I saw firsthand how chronic illness affects lives. A personal health scare led my family to adopt a whole-food, plant-based lifestyle, and the transformation was life-changing.
I now work with clients in person and remotely, offering support, accountability, and resources to help them implement a plant-based lifestyle and experience its profound benefits. My approach is rooted in the belief that you are an “N of 1” an individual with unique needs, strengths, and priorities.

Beth has experienced her own transformation through plant-based eating. In December, 2017, she had to leave her job of 30 years as a music educator due to her own battles with pain and weight issues. She encountered challenges in carrying out basic activities such as going up stairs or participating in meetings. She could no longer even imagine setting up the stage for my middle school orchestra!
Her journey from pain to relief began in 2018 after watching the movie, “Forks Over Knives”. Having recently completing the research for her EdD dissertation, she gained a greater understanding and admiration for the research and outcomes showcased in this film. It was truly impressive to see the profound influence of dietary changes on people’s lives, which was both evident and inspiring!
Since then, she has gained valuable knowledge and skills. She recently achieved Root-Cause Health Coach certification from Lifestyle Prescriptions University, following previous certifications in Plant-based Coaching from the Food Revolution Network, and Whole Foods Plant-based Nutrition from Cornell University. Through this journey, she has shed 50 pounds and maintained the weight loss, was able to discontinue BP medication after 22 years, and at the age of 68, even jogged the whole way to the end of her first-ever 5K race! She is now enthusiastic about assisting others in their health endeavors, supporting them through each step of the way!

She graduated Magna Cum Laude from Tennessee State University in Nashville, TN in 2003 where she earned a B.S. in Biology with a minor in Chemistry. Dr. Toombs-Withers earned a Doctorate Degree in Osteopathic Medicine from the Edward Via Virginia College of Osteopathic Medicine located on the campus of Virginia Tech in Blacksburg, VA in 2007. After completing her formal medical education, Dr. Toombs-Withers continued her medical training at the University of Cincinnati, The Christ Hospital. She is double board certified in Family Medicine and Obesity Medicine. Over the years, Dr. Toombs-Withers has served as Adjunct Associate Professor of Family and Community Medicine with the University of Cincinnati Family Medicine Residency Program and she worked as a Family Physician for a federally qualified health center caring for underserved populations in the Cincinnati area. In 2013 Dr. Toombs-Withers was named as the Medical Director for the All Care Health Center in Council Bluffs, IA where she continued to practice family medicine and supervised a staff of physicians and nurse practitioners. Dr. Toombs-Withers moved to Chattanooga, TN in 2015 and became a Family Medicine Physician in the UT/Erlanger Primary Care Medical Group at the Pineville Road office. She earned a certification in Plant Based Nutrition in 2016 and the was board certified in Obesity Medicine in 2018. Dr. Toombs- Withers has practiced a plant based diet for over 15 years and over the past 5 years she has moved to a vegan diet. She has trained as an endurance athlete and she has completed the New York City Marathon, Chicago Marathon, Ironman Chattanooga 70.3, Ironman Augusta 70.3, Ironman Texas and a host of other endurance races.
