Quinoa Sushi with Rainbow Veggies

This colorful, plant-powered twist on traditional sushi swaps rice for protein-rich quinoa and loads up on fresh, crunchy vegetables. Perfect for lunch, dinner, or as a fun appetizer that’s as beautiful as it is nourishing!

Yield: 6 rolls

Ingredients:

  • 1 cup       Quinoa 
  • 2 cups     Water
  • 2 tbsp      Rice vinegar
  • 1                Bell pepper
  • 1                Cucumber
  • 1                Avocado
  • 1                Carrot
  • 6 sheets   Nori

Directions:

  1. Add quinoa and water to a pot and bring to a boil. Cover, reduce heat to low, and simmer for 15 minutes or until all water is absorbed.
  2. While the quinoa cooks, cut the bell pepper, cucumber, avocado, and carrot into thin strips.
  3. Once quinoa is cooked, let it cool to room temperature, then stir in the rice vinegar.
  4. Place one nori sheet shiny-side down on a clean surface or bamboo mat. Spread ½ cup quinoa evenly over the nori, leaving a 1-inch border at the top edge.
  5. Arrange vegetable strips in a line along the bottom edge of the quinoa.
  6. Starting from the bottom, roll tightly away from you, using the uncovered edge to seal the roll.
  7. Wrap each roll in plastic wrap and refrigerate for 30 minutes to help it hold its shape.
  8. Unwrap, slice each roll into six pieces with a sharp knife, and serve.

Notes:

Make it your own– Swap or add fillings such as julienned mango, tofu, or pickled radish for extra flavor and color.

Flavor boosters– Sprinkle toasted sesame seeds inside or serve with tamari, ponzu, or coconut aminos.

Storage tip– Best enjoyed the same day, but leftovers can be wrapped tightly and refrigerated for up to 24 hours.
