Read more…My plant-based journey started over a decade ago when an initial mammogram indicated a heightened risk for breast cancer. Research into the lifestyle changes I could make to reduce my cancer risk led me to a plant-based diet. I have since developed a passion for the evidence-based science behind a whole-food plant-based diet for optimum health. I am certified in plant-based nutrition through the T. Colin Campbell Center for Nutrition Studies at eCornell and earned my initial health coach certification through the Institute for Integrative Nutrition (IIN). I have also completed the Lifestyle Medicine for Coaches training, offered jointly by the American College of Lifestyle Medicine and Wellcoaches, and earned an additional certification in Plant-based Coaching through the Food Revolution Network. I am currently preparing for the National Board of Health and Wellness Coaches Certification Exam. As a complement to my work as a health coach, I am a certified yoga instructor, Ayurvedic Yoga Specialist, and Jazzercise instructor, passionate about lifelong fitness, movement, and mindfulness. Over the course of my career, I have had the privilege to work with individuals in clinical, wellness, and mental health settings. Many of these individuals were taking an exorbitant amount of medications to manage chronic conditions such as diabetes, high blood pressure and heart disease. As a result of simple dietary changes to include wholesome plant foods, many were able to eliminate medications for these conditions. In fact, one individual lost over 100 pounds, which actually disqualified him from weight loss surgery.
My hope is that through engagement, and empowerment, I can assist individuals to incorporate principles of a whole food plant-based lifestyle to restore health and prevent the onset of chronic diet-related conditions.

Read more…I’ve been diagnosed with stage 4 Metastatic Breast Cancer and have been working with an integrative oncologist whom recommended going vegan or vegetarian. When I asked if there was any support the response was just google some recipes. This didn’t sit well with me and I dove headfirst to learn everything I can about whole food plant based diets and how to adapt this lifestyle in a way that works for me.
I now have no evidence of disease in my body and have learned to recognize how I feel in my body when adhering to a whole food plant based diet and when I have veered off of the diet. I’m on a mission to support others to incorporate Whole Foods into their diet creating a lifestyle that fits their needs. I have followed a plant based diet for 2 years. I first realized the importance of a plant based diet by watching the Food Revolution Network Summit 3 years ago. I recently graduated from the Food Revolution Network’s Plant Based Coaching Certification course.
Since getting off of processed foods and eating plant based, I am enjoying more energy and no longer having achy joints. I have also lost weight and kept it off for the first time in my life. I am passionate about helping other people transition to a plant based diet. It gives me great joy to see others enjoying their new found health and well being.

Beth has experienced her own transformation through plant-based eating. In December, 2017, she had to leave her job of 30 years as a music educator due to her own battles with pain and weight issues. She encountered challenges in carrying out basic activities such as going up stairs or participating in meetings. She could no longer even imagine setting up the stage for my middle school orchestra!
Her journey from pain to relief began in 2018 after watching the movie, “Forks Over Knives”. Having recently completing the research for her EdD dissertation, she gained a greater understanding and admiration for the research and outcomes showcased in this film. It was truly impressive to see the profound influence of dietary changes on people’s lives, which was both evident and inspiring!
Since then, she has gained valuable knowledge and skills. She recently achieved Root-Cause Health Coach certification from Lifestyle Prescriptions University, following previous certifications in Plant-based Coaching from the Food Revolution Network, and Whole Foods Plant-based Nutrition from Cornell University. Through this journey, she has shed 50 pounds and maintained the weight loss, was able to discontinue BP medication after 22 years, and at the age of 68, even jogged the whole way to the end of her first-ever 5K race! She is now enthusiastic about assisting others in their health endeavors, supporting them through each step of the way!

We were encouraged along the way by the myriad of health benefits we quickly noticed. Feeling so good and watching my family experience these benefits motivated me to dive into learning all I could about the science and research behind plant-based nutrition. She’s lost 25 lbs, lowered her cholesterol 35 points, and her doctor is no longer bugging her about taking statin drugs. She went from experiencing daily gas and bloating to having none at all. She has more energy, less brain fog, and sleeps soundly.
As a coach, I love helping my clients feel better using plants as medicine.
